Better Breakfasts for Busy Mornings

Even during school-free holidays, mornings can become marathons as you juggle all the activities of the season. To make the start of the day a little smoother (and a lot healthier), here are two simple, make-ahead recipes that your kiddos will love: Lemon Blueberry Muffins and Chia Jammy Bars.

Lemon Blueberry Muffins

2/3 cup oat flour

1 1/3 cup all-purpose flour

1 tsp. baking powder

1 tsp. cinnamon

1 cup LittleOak Toddler Drink

1 egg

1 tsp. lemon zest (the yellow part of the lemon peel)

3 Tbs. applesauce

1 cup blueberries (fresh or frozen)

Preheat oven to 350 F. In a big bowl, mix together oat flour, all-purpose flour, baking powder, and cinnamon. In another bowl, whisk together milk, egg, lemon zest, and applesauce.

Pour the wet mixture into the dry ingredients and gently stir until just mixed. Then, fold in the blueberries.

Lightly grease a muffin tin or line it with muffin liners. Scoop the batter into each muffin cup, filling them about 3/4 full.

Bake 20-22 minutes, or until golden brown. Let the muffins cool for a few minutes before enjoying them!

Chia Jammy Bars

1 1/2 cups organic oats

1 cup organic oat flour*

1 Tbs. coconut sugar*

1 tsp. cinnamon

1 tsp. baking powder

2 ripe bananas

1/4 cup LittleOak Toddler Drink

1 cup strawberry chia jam*

Mix dry ingredients in a large bowl. Add mashed bananas and toddler drink, and stir to combine.

Line a 9x9 pan with parchment paper, and evenly spread 3/4 of the batter into the pan. Spread chia jam on top. Dollop the remaining 1/4 batter on top and distribute in chunks. 

Bake 30 minutes. Cut into bars and wrap!

*oat flour made by grinding oats in a blender
*coconut sugar is optional and can be omitted for children under 2
*make chia jam in advance by heating 1 cup strawberries and 2 Tbs. chia seeds in a pot
