Turkey Day Leftovers

Turkey Pesto Sandwich

  • 4 large croissants
  • 1/2 cup pesto (or to taste)
  • 1-2 tbsp Mayo (or to taste)
  • 1 lb. turkey leftovers
  • 2 tomatoes
  • Lettuce or sprouts 

Combine pesto and mayo and spread evenly on each side of each croissant. Layer 1/4 lb. of turkey on each sandwich, add tomatoes and lettuce.

Leftover Mashed Potato Patties

  • Leftover mashed potatoes (about 1 qt.)
  • 1 diced onion
  • 1 egg
  • 1 up grated cheese
  • Flour
  • Butter
  • Salt and pepper

Combine mashed potatoes, onion, egg and cheese. Shape into large size balls. Roll into flour and flatten into patties. Melt butter in frying pan and brown for about 5 minutes on each side. Salt and pepper to taste.
