Cinnamon Swirl Peanut Butter Apple Cake

Prep Time: 20 minutes

Cook Time: 25 minutes

½ cup Once Again creamy peanut butter

1 egg

1/3 cup sugar of choice (coconut or brown preferred)

¼ cup applesauce, unsweetened

1 apple, chopped

1 cup oat flour

1 tbsp maple syrup

1 tsp cinnamon

½ tsp baking soda

Salt

Preheat oven to 350 F. In large bowl, combine peanut butter, egg, sugar, applesauce, and maple syrup until smooth.

Chop apple into small pieces and add to mixture. In a separate small bowl, combine dry ingredients including oat flour, baking soda, cinnamon, and pinch of salt.

Add the dry ingredients to the wet mixture, combine only until mixed. Pour batter into a well-greased 8x8 baking dish (Pyrex glass works well).

Sprinkle extra cinnamon and sugar on top. Bake 18-25 minutes until toothpick inserted in center comes clean. Remove from oven and let cool before cutting to serve.
